Tipsy Baking: Summer Shandy Cupcakes

Back by popular demand! Welcome to another rendition of tipsy baking! If you're looking more inspiration, check out my bourbon bundt cake here! Today I will be making boozy beer cupcakes using Athletic Brewing Company's Upside Dawn which is a golden ale. This beer is light, refreshing and perfectly complements the citrus of the lemon batter!

Anyway on to the recipe! As always do not be afraid to have a heavy hand when it comes to pouring!

Here’s what you’ll need…..

3/4 cups unsalted butter

2 cups sugar

2-1/2 cup flour

2 tsp baking powder

1/2 tsp salt

3 eggs

1 tsp vanilla

1/2 tsp lime zest

1 cup Blue Upside Dawn, plus more for brushing on tops

1/4 cup milk

Lemon wedges


1 stick of butter

1 tbsp freshly squeezed lemon juice

1 tsp lemon zest

1 tsp Vanilla

4 cups powdered sugar

1 lemon for decoration

Preheat oven to 375 degrees and line 24 muffin tins with cupcake liners.

Whisk together flour, baking powder, and salt.

using an electric mixer, beat together the butter and sugar until light and fluffy

Add eggs, beating after each one, then add the vanilla and zest.

Combine milk and beer and alternatively add this mixture and the flour mixture to the butter/sugar mixture with the mixer on low speed, starting and ending with the flour.

Fill the cupcake liners 2/3 full and bake for 18 minutes

Brush some beer on each while still warm

Beat together frosting ingredients until creamy

Pipe or spread frosting on each cupcake

Top with a slice of lemon!
