I do not know about you but I am so ready for fall. It has truly been a long hot summer. In honor of the changing of the seasons it is time to change up my coffee routine with Cold Brewtus!

I am such a cold brew girl, and I am on the constant hunt for the perfect grab-and-go caffeine kick in the morning. When I find a coffee I love, quickly I transform into the Dad from My Big Fat Greek Wedding and pour that ish on everything. Except this isn't windex, this is a smooth and strong af cold brew. It is not enough to simply drink these babies every morning, I have got to incorporate it into my new fall cookie experiments.
These are my take on the Pumpkin Spice Latte, that are a personal favorite of mine this time of year. Imagine if a chocolate chip cookie, a pumpkin pie and a cold brew got in the hot tub time machine and these baked goods would come out the other end.

Ingredients
2 sticks of butter
1/2 cup pumpkin puree
1 teaspoon vanilla extract
1/4 cup Cold Brewtus Espresso
1 egg yolk
1 cup brown sugar
1/2 cup granulated sugar
3 cups all purpose flour
1 1/2 teaspoon pumpkin pie spice
1 teaspoon baking soda
2 cups chocolate chips

Instructions
Whip together butter and pumpkin puree
Slowly incorporate vanilla extract followed by the Cold Brewtus Espresso
Next add in the egg yolk and stir. Pour in the brown sugar and granulated sugar and stir until combined.
Stiff together flour, pumpkin pie spice, and baking sod and stir until all ingredients are combined.
Stir in chocolate chips.
Put dough in the refrigerator for an hour
Preheat oven to 350 degrees.
Bake for 11-12 minutes
