I love brunch potlucks-- it is a great way to get together with friends and family over arguably the best meal of the week. Brunch potlucks are also the perfect place for my dueling natures to complement each other. By this I mean the foodie in me and the near continuous desire to "win" can work as one. Because showing up with a fresh from the oven berry skillet is not only impressive (putting all other dishes to shame), but also so freaking delicious and scary easy to make.
For this skillet I went with a combination of blueberries, blackberries, and strawberries-- strictly because that was what was in my fridge. Serendipitously, these are the correct seasonal berries for May, if you were to attempt this in the winter time I would sub in raspberries for strawberries, this will create a more tart effect-- lovely for a cozy evening in, maybe throw in some dark chocolate for some added wow factor.
Total time to make: ~35 minutes
One 8 inch cast iron skillet
2 cups of berries of your choice (for this I did 1/2c of blueberries, 1/2c of blackberries & 1c of strawberries, diced)
1 cup of sugar
1/2 cup of flour
Ingredients for Crust (or use store bought crust- no one will know)
1 cup of flour
pinch of salt
1/4 cup of vegetable oil
splash of milk (2 tablespoons extra for desire texture)
As many scoops of ice cream as you could want!
Preheat oven to 400 degrees. In a bowl toss sugar and flour with berries of your choice, once fruit is evenly coat place in cast iron. Mix ingredients for the crust, once totally combined roll out on your counter to about 1/4in thickness and cut into strips. Lay strips across the fruit mixture in pattern of your choice.
Bake for 25 minutes, top with ice cream and serve hot!
